- 1 tsp olive oil
- 4 chicken breast, thinly sliced (about 1 pound)
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 2 TBSP balsamic vinegar
- 1 peach, thinly sliced
- 4 ounces fresh mozzarella, sliced
- 2 TBSP fresh chopped basil
Instructions
- Preheat the oven to 400*F.
- Heat the oil over medium-high heat in a large oven-safe skillet. Sprinkle the chicken with salt and cayenne pepper. Add the chicken in one layer to the hot skillet. Cook for 5 minutes, and flip the chicken. Pour the balsamic vinegar over the chicken.
- Top the chicken with peach slices, and transfer to the preheated oven. Bake for 10-12 minutes, until peaches are slightly golden and chicken is cooked. Cover with mozzarella, and turn the oven to broil. Broil for about 2-3 minutes until cheese is bubbly.
- Carefully, remove from oven and sprinkle with fresh basil. Enjoy!
The Turkey Trot pushes some of us outside of our comfort zones. For many it is their first running event, for some it is their first time fundraising, but we also want to push you outside your comfort zone in regards to food and nutrition. How about combining fruit and protein?
